“Good taste has never been a quality to which I have aspired.
As a provocateur, I find it extremely difficult to provoke people by attacking them with good taste.
Moreover, and not to be too Farrugian, you cannot simply invoke the notion of ‘good taste’ without qualifying it.
There is good good taste and bad good taste, just as there is good bad taste and bad bad taste.
Bad good taste could be described as something akin to ‘piss-elegant’,
a pretentious attempt to be sophisticated and high-minded.
In the end, people who loudly proclaim their own ‘good taste’ are often self-conscious snobs,
more interested in conspicuous consumption and showing off than in any expression of refinement or style.”

OUR STORY

Chef Christopher Farrugia and his family established their namesake restaurant in the charming seaside village of Marsascala, Malta, when Christopher was just 23 years old. After gaining invaluable experience in London, working alongside renowned chef Marco Pierre White, he returned home with a vision to elevate local cuisine to the standards of Haute Cuisine and international excellence.

In 2003, Chris Farrugia opened Ambrosia—a quaint eatery nestled in the heart of Valletta, the historic capital and a UNESCO World Heritage city. Catering primarily to the corporate market, Ambrosia initially focused on serving lunch, offering a stark contrast to the fine dining experience of the previous restaurant. The bistro quickly gained popularity for its uncomplicated yet refined approach, where fresh ingredients and the principles of the slow food movement shaped a relaxed, elegant dining environment.
